      I LOVE turkey tacos. but I made chicken fajitas the other night and they are so similar to me and I tend to eat way too many tacos :) BUT hmmmmm they do sound good.

      what do you have one hand?. is the question but a few ideas

      layer cooked brown rice, can of tomatoes mixed with chili powder and cumin, browned beef sauteed with onions and mushrooms top (can add shredded zucchini or other veggies you have) with a bit of mozzerella

      Other flavors to use instead of chili powder could be roasted red pepper and basil and garlic

      oregano, thyme and top with feta instead of mozz

      how about a “Mexican lasagne”?. i’m veg, but you could use the turkey the same way I use the soy crumbles. Cook the turkey with some reduced sodium taco mix, layer your low-carb tortillas with that, plus some low-fat cheese or fat-free cheese and salsa/enchilada sauce. I also use jalapenos, onions, and whatever veggies I may have handy that I want to use up. I also will sometimes make an “avocado cream” to go on the side (blend avocado with some fat-free sour cream, cilantro, etc to make something like a lower-fat guac), or a chipotle sour cream. This dish is super-fast, reheats like a dream, and is pretty much failproof.

      Meatballs – eggs, 45 calorie bread, spices. Add to spaghetti squash and tomato sauce, and it is delish. you’ll want to toast teh bread, and you’ll want to leave the meat and eggs out for a few minutes, as you have to hand mix and that is cold! That’s what I did with my ground turkey. Also, Tacos :) For tacos we found a nice corn tortilla for 110 calories for two… we don’t cook it in oil.

      me too! chicken chili though. I threw it in the crock pot last night, let it go on high for 8 hours and this morning it was rocking. I put it in the fridge and will portion it out when I get home. I was even smart enough to weigh my crock pot before I put it together so that with my scale I can portion it out precisely and accrutately. I always forget to do this.

      I’ve made this recipe before, and it’s really good. You can also easily add extra veggies and/or sub a boxed corn muffin mix instead of making the topping from scratch to save some time & effort.

      How horrible would this be?. brown the turkey meat, add a jar of spaghetti sauce & a container of ricotta cheese. Mix that all together and simmer. Boil Whole Wheat Ziti and then mix all together in casserole dish…top with mozzarella & cheddar and bake in oven?

      i think the ricotta adds creaminess – i’d use. part-skim or lowfat cottage cheese, though, and not the full-fat version. I would use full-fat mozzarella on top, but sparingly, as a garnish for a lovely bubbly crust.

      Also, if your family likes broccoli, you could through some frozen into the pot while the noodles are cooking and mix those in your casserole for an extra veggie punch. You could also mix in some frozen, thawed and drained (squeezed) spinach instead.

      i don’t think so, but i wouldn’t simmer it with. the sauce.

      I’d go ahead and make the sauce with the turkey, boil the ww noodles to just not-quite-done (because they’ll cook a little more in the oven), and gently fold the sauce, noodles, and ricotta together. I’d top with mozzarella, and maybe parmesan or asiago or romano instead of the cheddar, but that’s just me, and then bake it. :)

      This is basically how I make my baked ziti, except with no meat because the BF is vegetarian.

      I would to. 1/2 container for ricotta (its for creaminess mostly) sparing mozz on top (make sure its gets yummy brown and melted) I would also mix in some veggie to.

      Shredded zucchini and/or carrot and onions in the sauce.

      And I would simmer the sauce and meat together for a bit. Makes nice and tender meat and helps infuse flavors.

      i’m making turkey chili tonight. with onions, black beans, fire roasted tomatoes, bell pepper…

      now i can’t remember what else i pput in my chili. chili seasonings, of course (cumin, chipotle, coriander, cinnamon)

      you can add other veggies if you have them, like mushrooms or zucchini.

      i also love to make meatballs with marinara sauce.
