Millet vs Quinoa.. Does anyone cook with either of these ingredients.
I have heard that both can be substituted for rice but most recipes I have seen call for Quinoa.
I was just curious because I would love to start cooking with them but when I went to the grocery store I could get a bag of Millet for cheaper and it was twice as big as the bag of Quinoa.

i’ve used quinoa. It’s easy and tastes good. I think quinoa has a slightly higher protein content than millet, making it a bit more of a nutritional powerhouse. Also because of its protein content, it’s been thrust into the grocery store spotlight, which might account for its higher cost.
It’s also a complete protein. Quinoa contains all of the essential amino acids, which is unusual for plant protein sources (buckwheat is the other instance). In most cases, you’ve got to combine different plant protein sources (eg: rice + beans) to get a whole protein.
Since your body can’t synthesize several amino acids, and doesn’t store protein (as it does glucose and fat), meals should include balanced proteins when possible.
My understanding is that millet’s protein profile is similar to wheat. Looks like it’s low in lysine.
I’ve used oat groats in lieu of rice. but not Millet or Quinoa. I really liked the oat groats!
colliflower. I prob spelled that wrong but if you heat up calliflower flourets in the micro with water it taste JUST like rice. It’s a bit time consuming though but worth it
That sounds interesting….. My problem is I have to cook for two very picky eaters.
I am trying to stay in their comfort level and was told the texture of millet and quinoa is close to rice. I thought it would be easier for them to branch out and try something new if it wasn’t too out there.
Besides. If I tell them they are eating veggies (even AFTER they’ve ate and said they liked it) they wouldn’t eat it.
It really is a struggle to make healthy dinners in my home when my BF won’t eat ANY veggies and now it is starting to rub off on my kiddo! (who used to LOVE all veggies. Now he will only eat a few varieties.)
The oat groats looked and felt like brown rice. but tasted like oats. They were pretty good!
