I need low carb recipes!!!. I am struggling to not get bored while lc.
I am somewhat picky, but I try most things (no FISH. hate it). I am just wondering if anyone has some great low carb recipes that will sneak some veggies in too.

what have you been cooking to start with so we. dont give you stuff you already know…
I’ve stuck to simple. I’m in college, so making time to cook isn’t easy.
Mostly I use boneless skinless chicken breasts, cook it with onions or something. Or chop it up and toss on some spinach. Or HB eggs with celery, scrambled eggs over spinach. Just very basic. I’m not that creative.
I’ve really wanted to try oopsie rolls and cauliflower pizza, but I haven’t made it to the store yet.
I also need some lc snacks. Mondays and Wednesdays I am in class from 10 to 6 with no breaks. I get really hungry but I don’t really have a way to eat a meal in there. So snacks I can carry with me would be great.
Thanks!
snacks. little greek yogurts (fage full fat is the lowest in carbs, but highest in calories)
almonds
(if you’re not in atkins induction)
string cheese
jerky
HB eggs
cut up veggies
berries

ways of sneaking in veggies include: spagetti squash, mashed cauliflower, stir fry…
another website I look to regularly. lowcarbfriends.com.. they have some creative and delicious recipes on here.. Just keep an eye on calorie counts if you are watching that as well.
Also, netrition.com have a decent selection of low carb products, some good, some not so tasty… I order my pasta and bake mix from them every few months
Love Kalyn’s Kitchen…. http://kalynskitchen.blogspot.com/2006/01/index-of-south-beach-diet-phase-one.html
Best resource IMO. Kalyn’s Kitchen has so many great recipes & cooking tips. I love the way she takes photos as she’s cooking. I frequently go there when I need an idea and a tested recipe. Everything made for Atkins/South Beach: http://kalynskitchen.blogspot.com/
But lots of other good healthy ones around (not necessarily low carb, but good for healthy recipes & ideas). Try:

I do like them. Though I don’t have to follow a gluten-free diet, I find that many of the ideas are good for everyone. Thanks for sending along one more to keep my eye on
