I had a very frugal.and healthy breakfast. I had a piece of whole wheat bread. I spread some Low fat cream cheese on top and topped off with blueberries.
Didnt cost much
I had eaten it a lot as a kid. Except i used a tortilla. It is absolutly amazing
What healthy recipes do you use?





Today I had. a slice of whole wheat EM, 1 egg, 1 egg white and spinach omlet and grapes. Coffee of course.
Simple one for me. 3 eggs over easy
1 cup of asparagus
Flax seed muffin here in a bit with some green tea.
The flax muffin is made of:
1/4 cp. flaxmeal
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. stevia
1 egg
Microwaved for a minute
whoa, that’s wacky. does that work? is it at all muffin-y?
It does taste just like a muffin. Texture is just like a bran muffin too! Amazing!
ok, i’ll try it.. probably on friday.
Actually “cooked” today. I made some egg whites and put them on a light multi-grain EM with 2% cheese.
And since peaches are in season right now, I had one when I got to my office. They are so perfect and juicy!
this mornign I cooked. and it really put a start to my day!!
eggs and veggies §.
eggs, spinach, black beans, tomatoes. and cheddar. And a nectarine.
Running late this morning. so I ate a big carrot as I chopped up veggies for my salad for lunch to bring to work.
When I got to work I finally had real breakfast: nonfat greek yogurt mixed with cinnamon, blueberries, Kashi Heart to Heart cereal, and a splash of skim milk.
I had oatmeal with brown sugar & banana §.
egg whites, spinach, & tomato in a. multigrain wrap. And soymilk + coffee.
simple…. oats with cinnamon and brown sugar.
oops forgot the pb. I usually throw in pb for healthy fat and some added protein. It’s more like a peanut butter oat mess with a hint of cinnamon sugar, but lordy is it good first thing in the morning. picks me right up.
Who started this pb in the oatmeal thang?. I love it, too!
i do it too, only. almond butter and quinoa instead of peanut butter and oatmeal, but same basic idea.
Tell me more about this quinoa.. I saw a huge bag of it at Costco and was tempted, but I have no clue as to what to do with it.
So you would eat it like oatmeal?
i use the flakes like oatmeal. and sometimes the whole grain when i’m at home, but you can also just cook it up and have it like rice, under stir fries, as a pilaf, etc.
it’s very high in protein.
So you could eat it in place or rice…. or pasta?
Others say it has a nutty quality?
it has a slightly. nutty taste and is soft when cooked. I use it instead of rice all the time. Its cooks up much smaller than a rice grain though and not as chewy- although that can be controlled by how long you cook it and how much water.
I make mine like a couscous or barley. with diced tomatoes, other veggies, garlic, etc.
Some people I know bake it in with eggs instead of potatoes (though I’ve never done that).
It’s good hot or cold tossed as a salad with roasted veggies.
My dad likes it for breakfast with brown sugar and/or honey and butter. I’m kind of glad I introduced him to it so he doesn’t eat fried potatoes all the time.
I didn’t learn about it. til I got involved in weightlifting. But I am glad I did
employee breakfast thing. there are going to be waffles, which i know i can’t eat, but i know at least one other employee is gluten free, so hopefully there will be something else. probably fruit, possibly eggs.
ended up with HB egg & fruit. blueberries, strawberries, grapes.
egg bake made sunday. so today I sliced and put in a container to heat at work. Very easy!
Has some leftover sauteed onion, chopped tomato, spinach, turkey bacong and laughing cow cheese. mixed with eggs (mostly whites) and baked until firm. Very easy and a good way to use up leftover veggies and meat.
mushroom, spinach, onion scrambled. along with homemade salsa & some blue berries
Yummy oatbran. with vanilla whey protein (heart you, Jay Robb), topped with 1/2 cup blueberries and blackberries, a bit of almond butter and coconut butter, and a drizzle of chocolate agave nectar.
Lots of water… I’m so thirsty today!
